LMC Cooking Series #40: Cooking with Crystal: Macrons

Macrons are a famous French dessert

Egg White Mixture:
– 35g of egg white
– 25g of powdered sugar
Dry Mixture:
– 50g of powdered sugar
– 50g of almond flour


-7 tablespoons of softened unsalted butter

-2 egg yolks

-1/4 cups of sugar

-3 1/2 teaspoons of milk

-1 teaspoon of vanilla extract

1. Preheat the oven to 305 degrees Fahrenheit.
Dry Mixture:
1. Sift powdered sugar and almond flour together twice.
Egg White Mixture:
1. Whisk egg whites and slowly add sugar in until medium peaks form.
Final Batter:
1. Add 1/3 of the dry mixture into the egg white mixture until well incorporated.
2. Add the rest of the dry mixture into the egg white mixture.
3. Add the batter into a piping bag and pipe circles on a baking sheet.
4. Wait until the surface is dry, when you touch the surface, it won’t stick to your finger.
5. Bake macarons for 14 minutes.


  1. Mash butter until a mayonnaise consistency
  2. Whisk egg yolks, sugar and milk  in a separate bowl until well combined
  3. Add egg mixture into a saucepan on low heat and whisk until thick and custardy
  4. Put egg mixture in bowl and whisk until it returns to room temperature
  5. Gradually add egg mixture into butter along with vanilla extract
