posted in: Events

Host: Aiden Yin

This is an ice cold dessert, perfect for those hot summer days

Mango Base:

450 grams of mango, around 2 mangoes

150 grams of milk

50 grams of ice

Rice Pearls:

110 grams of glutinous rice flour

100 grams of milk

30 grams of sugar

Some extra mango cubes

A mint leaf (optional)

  1. Heat 100 grams of milk in a small pot and add the sugar
  2. Once the sugar dissolves, remove from heat
  3. Add the milk into the glutinous rice flour, and stir until it becomes a smooth dough. You may need to add more milk/rice flour if its too dry or wet
  4. Roll small sections of the dough into spheres about 1cm in diameter
  5. Cover with saran wrap to prevent drying
  6. Pour some water into a pan
  7. Once the water starts to boil, add in the pearls
  8. Let the pearls sit in the water for a few minutes, or until they float to the surface
  9. Strain out the water, and put the pearls in a bowl of water to prevent sticking to each other
  10. Blend 450 grams of mango, 50 grams of ice, and 150 grams of milk until there aren’t any fibers left from the mango, about 5 mins
  11. Assemble. Put about a cup of the blended mango into a bowl. Then, add your mango cubes, pearls, and mint on top.
  12. Enjoy!
