LMC Cooking Series #38: Cooking with Lucy: Red Braised Pork

Red Braised Pork is a famous Chinese dish


Main Ingredients:

Pork belly/ vegetarian pork belly:300-350g

→ Alternate: meat

Crystal sugar: 25-30g

→ Alternate: sugar

Oil: 2-3 tbs

Soy sauce (Light soy sauce): 2-3 tbs

Water: 1.5L


Recommended ingredients:

Dark soy sauce (for coloring): 1tbs

Ginger: 5g

Bay leaf: 2 pieces

Star anise: 2 pieces

If using real meat :

→Scallion: 5g

→Ginger: 5g



1, Unfreeze the pork belly.

Make sure to do this step before class

2, Boil 500 ml water in a pot.

3, Heat oil and crystal sugar in another pot.

4, Dice the pork belly in to ½ x ½ x 1 inch pieces.

5, Boil the pork belly with scallion and 5g ginger in the pre-boiled water.

6, After Crystal sugar fully melted, refreeze it for 2 minutes.

7, When water in pork belly’s pot boiled for 2 minutes, pick out diced bork bellies and pour the water out.

8, Add 200ml water, pork belly, oil-sugar crystal, light and dark soy sauce, 5g ginger, bay leaves, and star anise to the pot, start boiling.

9, boil for 45 minutes. For every 10-15 minute, add 200ml water into the pot.

10, done.
