LMC Cooking Series #37: Cooking with Chris: Mandarin Rolls

花卷is a main dish like rice that is eaten in certain parts of Southeast Asia.

Ingredients: (1tsp = 5g)

  1. All purpose flour – 300g
  2. Sugar – 2 tsp
  3. Water – 165g
  4. Salt – 1 tsp
  5. Spring onion – as needed
  6. Oil of your choice – based on your preference
  7. Seasoning (ex. Five spice powder) – optional
  8. Yeast – 1 tsp

 

 

 

 

 

Steps/Procedures:

  1. Using a kitchen mixer, mix all the ingredients EXCEPT oil (for about 10 minutes, until everything is nice and clean)
  2. Let the dough sit for 20 minutes, covered with a plastic wrap to prevent drying

—-It is required to complete the first two steps before class—–

  1. When the dough is ready, cut it into 8 pieces, similar in size
  2. Roll out each piece
  3. Using a brush, add oil to the top of each piece of dough (this is also where to put the spring onions and seasonings if you like J
  4. Stacked four pieces together with oil already on the surface
  5. Cut each stacked dough (4 cuts)
  6. With a chopstick (or anything of the same shape), press down the stacked pieces, pinch the two sides
  7. Let it sit in a place with accurate temperature (28 degrees celsuis) and humidity, for 30 minutes
  8. At last, steam (using any equipment) for 15 minutes straight (make sure to add enough water and put it on medium heat)
