LMC Cooking Series: Cooking with Aiden: Thai Red Curry

Red curry is a dish that is popular in Thai cuisine

Ingredients to prepare:

1.5-2 tablespoons of red curry paste, according to your spice preference

1 1/4 cups of cooking coconut milk

1 chicken breast, sliced into 1/2 centimeter slices

3-4 lime leaves, stems removed and chopped into quarters

2 tablespoons of fish sauce

1 tablespoon of sugar

1/4 cup of basil leaves

1/2 cup of bamboo shoots

1/2 cup water

Steamed rice

Optional:

1/3 cup bell peppers

2-3 Thai eggplants, each cut into 6-8 slices
